I don't know about you, but when I want a fancy pasta (aka, anything that's different from plain ol' spaghetti,) I tend to plan a trip to my favorite Italian restaurant. Thanks to this recipe- that no longer has to be the case! Juicy tomatoes, sweet basil, and a touch of cheesiness- this dish will have you coming back for seconds every time!
GUESS WHAT? It is also NUTRITIOUS for you! The tomatoes and basil provide a variety of vitamins and antioxidants, the gluten free (Quinoa) pasta gives you a sustained energy due to it's lower glycemic rate, and the organic ricotta adds a nice dose of healthy fat to feed the brain!
Ingredients:
1/4 cup Coconut Oil
5 cloves Garlic (minced)
2 cartons Organic Cherry Tomatoes (cut in half)
Handful fresh Basil (chopped)
Juice from half a Lemon
1 box Quinoa Noodles
1 cup Organic Ricotta Cheese
Sea Salt (to taste)
Pepper (to taste)
Instructions:
Bring a pot to boil and start cooking pasta noodles according to box instructions.
While your noodles are cooking, add the coconut oil and garlic to a pan. Begin to sauté.
Before the garlic is finished sautéing, add in the cherry tomatoes and cook until tender.
Once tender, add your lemon juice and basil.
When the noodles are finished cooking- drain the water and mix in the ricotta cheese.
Add your tomato mixture on top and season with salt and pepper.
