Lentil Soup

One of our family's favorite cleanse + detox friendly recipes is Lentil soup! We had never tried lentils before we did our first Standard Process cleanse and now they are a staple in our household! This meal is easy, hearty and tastes like more than vegetables - which is a win!

 

Prep Time: 15 minutes

Servings: 4-6

Shopping List:

2 Cups of Lentils

5 Peeled + Diced Carrots

5 Diced Stalks of Celery

1 Diced Red Onion

1 Diced Red Pepper

1 Diced Green Pepper

1 Diced Yellow Pepper

2 Cloves of Garlic

1 Tb Cumin

1 Tb Paprika

2 Tb Olive Oil

2 Quarts Vegetable Stock

Pink Himalayan Salt + Pepper to taste


Directions:

1. Rinse lentils.

2. Add all ingredients except vegetable stock and lentils to pot.

3. Cook on medium heat for 10 minutes.

4. Add lentils and vegetable stock.

5. Bring to a boil.

6. Reduce heat to low. Simmer 90 minutes.

 

One question I get frequently: Where do we grocery shop?? There are a TON of healthy options in town (Aldi, Health Plus, Meijer, Kroger, Sam's Club, etc.) My family always starts at Aldi for high quality and affordable healthy options. These are some of our favorites...

When shopping for lentils, you'll typically find them in the beans or rice section of the grocery store as a legume. You will also find that many brands are starting to make lentil pasta - which is delicious and cleanse friendly! Our family loves the red lentil pasta at both Aldi and Meijer.
