We made ours into breakfast wraps- complete with avocado, chicken sausage, and sautéed peppers and onions; but this wrap is super versatile and can be used for any meal of the day!
3 Cage-free eggs
Extra large handful organic spinach
In a blender, combine all ingredients.
Blend until ingredients have turned into a liquid.
Heat up a pan on the stove and coat your pan with avocado oil or coconut oil.
Pour liquid into hot pan until the pan is covered by a thin layer of your batter.
Once the top stops 'jiggling' flip it over in the pan and cook for another 30 seconds to a minute depending on the heat of your pan.
Makes 3-6 tortillas depending on the size pan you choose.
