Spiced Moroccan Meatballs | Serves 4

CONSUME ONLY ON DAYS 11-21


Ingredients

• 1 pound ground beef or turkey

• 1 1 ⁄3 cups cooked quinoa, rinsed and cooled

• 1 cup fresh cilantro leaves (packed), chopped

• 2 teaspoons cumin

• Salt and pepper to taste

• 1 egg


Instructions

Preheat oven to 400°F. In a large bowl, combine all ingredients. Form into 20 balls, about 1½ inches in diameter each. Bake on a greased baking sheet, about 14 to 18 minutes or until no longer pink inside. Serve in marinara sauce or alongside salad.
